There is nothing I love more than the sound of all three of my children praising one of my dinners – its a pretty rare thing for them to all love the same thing. This post is to remind you that there is more to mince than Spag Bol! This recipe for Beef & Lamb Kofta is delicious!

Just A Mum's Beef & Lamb Kofta

This Kofta recipe is definitely one of our favourites, helped of course by serving it with lots of fresh salad, vegetables, dressings and fresh flat breads or tortillas, what's not to love!

I have shared before some of my favourites such as Lasagna, Spaghetti Bolognaise, Shepherds Pie, Nachos etc, the basic family dinners, but one we all adore is my Beef and Lamb Kofta, and this is not just for the kids!

Just A Mum's Beef & Lamb Kofta

Kofta basically means ground or minced meat, formed into rolls or balls and grilled or baked using a delicious ranges of spices. A delicious Mediterranean dish, you can create your own delicious variations depending on the flavours you enjoy.

To keep ours family friendly we omit any hot spices such as cayenne or chillis, but if you love a bit of heat then definitely add a little in. My version is very mild but still retains the authentic flavours of Kofta that go so beautifully with the fresh Tzatziki dressing and salad! Oh and it is worth pointing out that I used store bought Tzatziki, Hummus and tortillas today! If you wish to go all homemade then please do, but I am all about easy and you can get the loveliest products in the supermarket to save time!

Just A Mum's Beef & Lamb Kofta

We use both Beef & Lamb, you could use just lamb or even just beef. I like the combination as I feel it gives more depth of flavour and more moisture.

You can choose either premium or true value beef mince. I have used the true value today, it is cheaper and I prefer the added fat to give more moisture to the end result of my kofta.

Just A Mum's Beef & Lamb Kofta

So without further ado onto the recipe, it is so simple, feel free to add, amend or change as you go. I added fresh Mint as we have it in the garden.

Ingredients

  • 500 Grams True Value Beef Mince
  • 500 Grams Lamb Mince
  • 1 small Onion, finely diced
  • 2 teaspoons Garlic, crushed
  • 3 Tablespoons Flat Leaf Parsley, finely sliced
  • 2 Tablespoons Mint, finely sliced
  • 2 teaspoons Cumin, ground
  • 2 teaspoons Paprika, ground
  • 1 teaspoon Coriander, dried
  • 1/2 teaspoon Ginger, ground
  • 1 teaspoon salt
  • 1/4 teaspoon pepper, black
  • Oil
  • (Optional, cayenne pepper or dried chilli powder for extra spice!)

Instructions

  • Soak 12 wooden skewers in water for at least 20 minutes, ensuring they are the right size to fit your pan or BBQ grill
  • In a large bowl or food processor add the beef mince, lamb mince, parsley, mint, cumin, paprika, coriander, ginger, salt and pepper and mix or blitz until you have formed a paste.
  • Take 1/4 cup amounts and form into a sausage shape then insert the skewer and continue to shape the meat around the skewer until the sausage shape is approximately 1 inch thick.
  • Repeat with the remaining meat
  • Chill the kofta skewers for at least 30 minutes until firm, or overnight. They can also at this point be frozen.
  • Heat your BBQ plate or frying pan to a high heat and add a drizzle of oil to the pan.
  • Add the skewers to the pan (ensuring they are not crowded) you may need to do batches if using a frying pan
  • Turn the heat down to medium and cook until they are dark brown, then turn, repeat, turn, repeat, cooking for approximately 10 minutes total.
  • Set kofta aside until you have cooked them all
  • Serve with fresh rocket or spinach, tomatoes, carrots, cheese, Hummus, Tzatziki and warmed torillas or soft flatbreads.
  • It is a wonderful simple recipe to have, makes a great dish to take to pot luck dinners too as goes so well with fresh salads. Make little ones for mini sliders!
